What is the point of asking what spiciness level on the Cowboy roll is wanted if you're going to totally ignore it???? The roll, on top of the spicey mayo (which I'm fine with) was LOADED with Sriracha sauce! I almost died when I tried the first piece. Had to blot it all off just to be able to try another piece. Unfortunately, that also took off all the spices mayo and roe. In addition, the shrimp tasted and looked like it was seriously undercooked. Considering I was craving sushi my entire drive home from Denver, and had decided to wait till I got home so I could try a local joint, TOTAL DISAPPOINTMENT! At least the seaweed salad didn't disappoint, but then, I'm startto think most places get it already made from the suppliers.
